  17. <p>     Is DAVID BOULEY the prototypical chef of the future? He
  18. thinks so. It's true his eponymous restaurant was just named the
  19. most popular eatery in New York City by the Zagat Survey, ahead
  20. of perennial favorites The Four Seasons and Lutece. It's also
  21. true the 38-year-old wundercook is leading the charge to use
  22. more organic products in American cuisine. But can a kid from
  23. Connecticut thrive in the chef-eat-chef world of fancy French
  24. cooking? It can't hurt that he spends $12,500 a month on
  25. chocolates and flowers, has almost as many employees (76) as
  26. seats (80) and uses a computer to track what his customers eat
  27. and where they sit. "European chefs have thought Americans don't
  28. know about food, but people are more aware of what they eat
  29. now," says Bouley. "I represent the new voice of American
  30. diners."
